Laura Bush's Cowboy Cookies

I first had these cookies at Christmas. They are now one of my favorite cookies. I can't keep them in the cookie jar because I will eat them ALL!



Laura Bush's Cowboy Cookies

3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1-1/2 cups butter (at room temperature)
1-1/2 cups granulated sugar
1-1/2 cups packed light-brown sugar
3 large eggs
1 tablespoon vanilla extract
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans

Preheat oven to 350 F. Mix flour, baking powder, baking soda, cinnamon and salt in bowl. In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars; beat to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla extract. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart. Bake for 17 to 19 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool. Makes about 3 dozen cookies. NOTE: For 6 dozen (72) smaller cookies, use 2 tablespoons dough for each. Bake at 350 F for 15 to 18 minutes. Note: As seen on "Good Morning America."

For the Love of Chocolate...

This recipe is for all of those women who love chocolate. If you don't, just stop now because this recipe is so amazing and rich. If you love chocolate, you will love these brownies.


Layers of Love Chocolate Brownies
3/4 C. Flour
3/4 C. Cocoa
1/4 tsp. Salt
1/2 C. Sugar
1/2 C. Butter, Cut into Pieces
1/2 C. Packed Brown Sugar
3 Large Eggs, Divided
2 tsp. Vanilla Extract
1 C. Chopped Pecans (Optional - I didn't include these)
3/4 C. White Chocolate Chips
1/2 C. Caramel Ice Cream Topping
3/4 C. Semi-Sweet Chocolate Chips
Preheat oven to 350. Grease and 8 inch baking pan. Combine flour, cocoa, and salt in a small bowl. Beat butter, sugar, and brown sugar in a large bowl until creamy. Add 2 eggs, one at a time, beating well after each addition. Add vanilla extract and mix well. Gradually beat in flour mixture. Reserve ¾ cup of the batter. Spread remaining batter into prepared pan. Sprinkle nuts and white chips over batter. Drizzle caramel topping over top. Beat remaining egg and reserve batter in the same large bowl until light in color. Stir in semi-sweet chips. Spread evenly over caramel topping. Bake 30-35 minutes or until center is set. Cool completely in pan on wire rack. Cut into squares. (I doubled this recipe and made it in a 9 x 13 pan).

The Process:

Add the first chocolate brownie layer and add white chocolate chips

Drizzle with Caramel Topping
Add Chocolate Chips to the reserved Chocolate Brownie mixture

Put in the oven and wait patiently...Not Easy!
Make sure you have a gallon of milk on hand
